XO Sauce has become quite common in recent years, but we have made an extra effort to distinguish ourselves. Obviously it starts from the finest ingredients: japanese scallops, dried shrimps and natural spices. The real secret manifests itself in controlling the cooking process to get just the right level of caramelization – bringing out flavors of the ingredients while preserving the delicate texture of scallops. Made this way, the condiment compliments the texture when used as a dip while the flavors are ideal for stir-frying or steaming seafoods, meats and vegetables.
