This versatile sauce is spicy, sweet and tangy at the same time. It is made from a constellation of naturally umami rich ingredients: dried Japanese scallops, dried shrimps, chilli, lightly fermented soy beans and garlic. Use this sauce when injection of intense umami flavor that is brought out through stir-frying at high heat over a short period is required: seafood (especially prawns), chicken fillets and green vegetables.
