Chinese Gooseberry is a fruit found only in South China. Handpicked gooseberries are carefully heated with red chili, ginger and rice vinegar and sugar to produce the Chinese Gooseberry Sauce. It is an alternative to sweet and sour sauce, with a fruitier astringency that softens fatty dishes and fishy odours: use in steamed ribs, pork, fish heads and fish. Pat Chun also offers Plum Sauce and Lemon Sauce, which are all prepared with fresh fruits with alternative flavours to the Chinese Gooseberry sauce.
