This thick and sweet sauce is made from a base of 9-month fermented soy sauce, its unique tropical fragrance comes from a slow cooking process with palm sugar, it is a perfect compliment to dishes such as Hainanese chicken rice, south east Asian style chicken wings and pork chops. Our favourite though, is to pour it liberally over claypot rice.
