Pat Chun Soy Sauce Supreme is made in a similar manner to the gourmet light soy sauce. However, instead of saline for the summer fermentation, it is replaced with a freshly fermented batch of light soy sauce – in other words, the sauce absorbs flavors from 2 rounds of fermentation instead of one, and is thus also known as a double brewed soy sauce. The whole process takes 18 months and the result is a soy sauce with intense fragrance, full-bodied texture and rich colour. It especially shines when used in dishes where the flavors of soy sauce takes centre stage: soy sauce chicken, marinated beef shank teriyaki pork etc.
