Stuffed Bitter Melon(Serves 4)


600g bitter melon
380g pork meat, chopped
40g salted fish, chopped
1 tbsp garlic, chopped
1 tbsp pat Chun Fermented Soy Beans
2 egg, removed 1 egg yolk
4 cups water


1 tsp Pat Chun Chili Garlic Black Bean Sauce
1 tbsp Pat Chun Oyster Sauce
1 tsp corn starch mixed with water
Dash of salt


1. Cut bitter melon in to cylinder, remove pits. Blanch bitter melon in hot water.
2. Mix pork meat, salted fish, garlic and fermented soy beans. And then add egg. Stuff all ingredients in bitter melon.
3. Fry stuffed bitter melon with oil till fragrant. And a little water and bring to boil for 20 minutes.
4. Add sauce and then bring to boil. Serve.
