Sautéd Pork Chops in Sweetened Vinegar Sauce (Serves 4)
450g pork chops, pounded with flat edge of knife
¼ onion, sliced
3 tbsp corn starch
2 tbsp oil
Marinade and Sauce:
6 tbsp Pat Chun Sweetened Vinegar
3 tbsp Pat Chun Hoi Sin sauce
1 tbsp Pat Chun Sesame Sauce
1 tbsp Pat Chun Sweetened Bean Sauce
1 tbsp Pat Chun Chu Hou Paste
1 tbsp Pat Chun Chinese rice wine
2 cloves garlic, minced
2 cloves shallots, minced
3 tsp sugar
4 tbsp water
1. Cut pork chops into 2 pieces. Wipe dry and mix with corn starch. Marinate for 1 hour.
2. Remove pork chops from marinade. Set aside marinade juices. Sauté pork chops in 1 tbsp of hot oil until golden. Remove from wok or pan.
3. Stir-fry onion in 1 tbsp of oil until fragrant. Pour in marinade juices. Bring to the boil. Add pork chops and heat through.
