Sizzling Spareribs in Hot Pot (Serves 4)

Ingredients:

450g spareribs, chopped into 5cm pieces
8 cloves shallots, crushed
8 cloves garlic, crushed
4 slices ginger, crushed
1 stalk spring onion, sectioned
1 tbsp oil

Marinade:

2 tsp Pat Chun Gourmet Light Soy Sauce
2 tsp corn starch
1 tsp Pat Chun Gourmet Dark Soy Sauce
1 tsp Pat Chun Pure Sesame Oil
1 tsp sugar

Sauce:

1 tbsp Pat Chun Gourmet Dark Soy Sauce
1 tbsp Pat Chun Gourmet Light Soy Sauce
1 tbsp Pat Chun Oyster Sauce
1 tsp sugar
¼ cup water

Thickening:

1 tbsp corn starch
2 tbsp water

Preparation:

1. Marinade spareribs for 20 minutes.
2. Stir-fry spareribs in 1 tbsp of medium hot oil in a clay pot until golden brown. Add shallots, garlic, ginger and spring onion. Stir-fry.
3. Add Sauce. Cover and simmer over medium heat until tender. Stir in thickening. Heat through.
