About Rice Vinegar

Rice is central to Chinese food and culture so it should come as no surprise that the Chinese have been using rice to make vinegar for at least 3,000 years. Rice wine is made by adding yeast to glutinous rice, kicking off a fermentation process that transforms the sugars into alcohol. By adding bacteria to rice wine, the alcohol is turned into acid, producing rice vinegar. Though rice vinegar is milder and sweeter than its Western counterpart, many enjoy the range of sophisticated flavors and unique full bodied fragrance.

Rice Vinegar in the Kitchen & Beyond

Chinese rice vinegar comes in three types: white, used mainly in sweet-and-sour dishes; red, an intriguing combination of tart and sweet, is a very good dipping sauce, and is used in noodle, soup and seafood dishes; and black, its deep, smoky flavor works well in braised dishes and as a dipping sauce. Rice vinegar is highly versatile and may be used as a marinade, to make sushi rice and salad dressings, and in everything from stewed short ribs to potato salad.

The medicinal value of naturally brewed vinegars is well known in China. Rice vinegar is considered to be a digestive aid which is low in calories, and has also been prescribed to treat high blood pressure and high cholesterol, improve blood circulation, and even ease hangovers!
