About Ginger
The ginger is a fleshy rhizome which aids digestion, relieves
stomachaches, and when used in small doses may prevent morning sickness and motion
sickness. Ginger contains high levels of Vitamin C and is widely acknowledged to
have a calming effect.
It is probably native to Southeast Asia though the Chinese have been aware of ginger
since ancient times. The humble ginger has also played an important role in the diets
of other ancient cultures - the Egyptians and Romans used ginger, and Marco Polo's
memoirs of his travels along China's Silk Route mention ginger.
Ginger in the Kitchen & Beyond
A common condiment or spice, fresh ginger is used in everything from stews
to stir-fried dishes. In Chinese cooking ginger is used to neutralize excessively strong fishy
flavors and to add its own unique aroma to more delicate seafoods.
Chinese herbologists have long been convinced of the ginger's
medicinal properties. While ginger tea is often prescribed as a digestive aid,
herbal preparations containing ginger have been used to treat even HIV symptoms
and Raynard's disease, a rare condition characterized by an unusual sensitivity
to the cold.
